Ember & Oak
Freshly roasted coffee tumbling from the drum roaster into the cooling tray at the Ember and Oak roastery in Portland

Portland, Oregon. Roasting since the first batch.

Small batches,named origins,honest roast dates.

We roast single-origin lots in tight batches on a drum roaster in inner southeast Portland. Cafes get a partner who answers the phone. Home brewers get a bag that tastes like the week it was roasted.

On the bar now: Ethiopia Guji, Colombia Huila, Guatemala Huehuetenango.

By the batch

The numbers we run
the roastery by

Nothing here is a marketing round number. Batch size sets the ceiling on how much we can roast well in a day, and the roast date on every bag is the day it actually left the drum.

Figures describe our current roasting schedule. Partner counts and cafe names are published only once each account confirms them.

01

Roasted to a profile

Every lot gets its own curve, logged batch by batch, so the tenth bag tastes like the first.

02

Cupped every week

We cup the current production table each week and pull anything that drifts off the profile.

03

Dated, not stickered

Roast date is printed on the bag. If you want a specific date for a launch, ask and we will schedule it.

named down to the farm

We keep the table small on purpose. Three lots means we can roast each one properly and tell you exactly where it came from, how it was processed, and how it tastes.

Roasted in Portland

We buy the lot first
and build the roast
around it

Green coffee arrives in bags we chose from samples cupped on our own table. We buy through importers who name the producer, the region, the altitude, and the process, and we print those same details on the bag so you can check our work.

The roastery is a working room in inner southeast Portland: one drum roaster, a cupping table, and a schedule tight enough that nothing sits in a bin waiting for a truck.

What we publish

Producer or co-op, region, altitude, variety, process, roast date.

What we hold back

Any sourcing or certification claim we cannot show paperwork for.

Questions cafes ask

Answered plainly,
before you enquire

If your question is not here, put it in the form and we will answer it in the same reply as the price list.

What is the minimum order?

Ten pounds a week gets you a standing account with a set delivery day. Below that we can still supply you, but on a bag-by-bag basis rather than a roast schedule.

How fresh is the coffee when it arrives?

We roast on Tuesday and deliver or ship on Thursday, so coffee reaches you two days off the drum with the roast date printed on the bag.

Do you help with equipment and dial-in?

We dial in on your grinder and machine at opening and again with every new lot. We do not sell equipment, but we will tell you plainly what we would buy.

Can we get a custom espresso blend?

Yes. Once your account is running we can build a blend for your bar from the lots on our table, cupped with you before it goes into production.

What are your sourcing claims?

We publish producer, region, altitude, variety, and process for every lot. We do not use direct trade, organic, or fair trade language unless the paperwork for that specific lot supports it.

Do you deliver outside Portland?

Portland metro cafes get van delivery. Outside the metro we ship on the same roast schedule, with the freight cost shown on the price list.
